PEAS IN CREAM 
1 c. dried whole peas
2 slices bacon
1 tbsp. butter
1 med. onion
1 tbsp. flour
1 c. sour cream
1 sm. can mushrooms

Soak peas overnight. Boil in same water until done. Do not overcook, peas should be whole, not mushy. (There should be about 2 cups of boiled peas). Strain. In separate pan fry bacon which has been cut in small pieces, add chopped onion, saute until onion is cooked.

Add butter. Stir in flour, then blend in the sour cream and liquid from mushrooms, and cook until thickened. Add mushrooms and cooked peas. Heat. Mixture should be quite thick. If desired, it may be thinned with a little milk. 1 package frozen green peas can be substituted for dried peas.
