CREAM OF GREEN PEA SOUP 
1 sm. onion, minced
2 tsp. dried mint (opt.)
2 tbsp. butter
2 c. chicken broth
2 (10 oz.) pkgs. frozen green peas
1 c. milk, half and half or cream
1/2 tsp. salt
1/4 tsp. pepper

In saucepan, saute onions in butter until tender. Add broth and peas and bring to boil; simmer 5 minutes. Puree in several batches in blender until smooth. Return to saucepan; add milk, salt and pepper. Heat through. Makes 8 servings.
