MEAT BALL AND POTATO SUPPER 
1 lb. ground beef
2/3 c. fine dry bread crumbs
2/3 c. evaporated milk
1 tsp. salt
1/2 c. finely cut onion
2 tbsp. flour
1/2 c. sliced onion
3 c. thinly sliced, peeled potatoes, uncooked
1 tsp. salt
Pepper to taste
1 c. water

In a bowl, mix meat, bread crumbs, milk, salt and finely cut onion. With wet hands, shape into 12 meat balls. Roll meat balls, one at a time, in the 2 tablespoons flour. Brown slowly in 2 tablespoons oil. Push meat balls to side of skillet and add 1/2 cup sliced onion. Cook slowly 5 minutes.

Put potatoes on top of meat and onions in skillet. Sprinkle with salt and pepper. Pour 1 cup boiling water over all. Cover tightly and cook over low heat until potatoes are tender or about 20 minutes.
