MUSHROOM AND RICE CASSEROLE 
1 1/4 c. uncooked rice (regular white)
1 stick butter, melted
1 sm. onion, chopped
1 (8 oz.) jar sliced mushrooms, drained
1 can beef broth
1 can consomme
Salt

Combine all ingredients in a casserole dish. Bake at 400 degrees for 1 hour. Cool slightly and stir.
