TEXAS STYLE SHRIMP CREOLE 
2 med. onions
1 bell pepper
3 stalks celery
1 tbsp. olive oil
1 can (sm.) tomato paste
3 cans (med.) tomato sauce
1 can (lg.) Italian tomatoes
1 clove garlic
5 sm. bay leaves
1/2 can Rotel tomatoes
Dash salt, vinegar
3 lbs. cooked peeled shrimp

Saute onions, pepper and celery in oil. Add tomato paste and cook 5 minutes. Add remaining ingredients except shrimp. Simmer 2 hours. Add shrimp last 15 minutes. Serve over rice.
