ZUCCHINI OR SUMMER SQUASH 
2 to 3 lb. squash
1 onion, chopped
2 tbsp. butter
Salt and pepper
1/4 c. cream
2 eggs, slightly beaten
1/2 c. grated cheese
Buttered bread crumbs

Cook squash with onion in a small amount of water until dry and clear. Add butter and seasonings. Add cream and mash. Add eggs, blend; add cheese. Mix and put in a greased baking dish. Cover with bread crumbs. Bake at 350 degrees for 1 hour or until brown.
