SUMMER OR ZUCCHINI SQUASH
CASSEROLE
 
2 lb. sliced squash (6 c.)
1/4 c. chopped onion
1 can cream of chicken soup
1 c. sour cream
1 c. shredded carrot
1 (8 oz.) stuffing mix
1/2 c. butter, melted

Cook squash and onions in boiling water for 5 minutes. Drain. Combine soup and sour cream. Stir in carrots. Fold in drained squash and onions. Combine stuffing mix and butter. Put 1/2 in the bottom of 12 x 7 inch baking dish. Spoon vegetable mixture on top and sprinkle best of stuffing mix on top. Bake 25-30 minutes in 350 degree oven. Use cooked chicken meat or grated cheese for full meal dish.
