ITALIAN TOMATO SAUCE | |
Handful of salt pork, cubed 2 lg. cloves garlic 10 chicken pieces 1 lb. veal 1/2 lb. hot sausage 1/2 lb. sweet sausage 4 tomatoes, canned and peeled 2 cans tomato paste Brown salt pork and garlic. Add chicken veal, and sausage. Cook on medium heat, covered until meat is half cooked. Stir often. IMPORTANT: Do not remove stock from meat. Add tomatoes, crushing with hands and remaining stems and excess skin. Cook 5-10 minutes. Add paste. Simmer with cover cracked, several hours. Remove meat when cooked, add meatballs. If sauce is too acid or salty you have too much salt pork, or try different tomatoes. MEATBALLS: 1 lb. hamburger Season to taste - garlic fresh or powder Italian bread crumbs 1 egg for every lb. of hamburger Oregano Parsley Grated cheese Make into balls and cook in tomato sauce. Do not fry meatballs. |
