LIVELY SHRIMP CASSEROLE 
1 med. onion
3/4 c. melted butter
2 lbs. cooked, peeled deveined shrimp
1 (10 1/2 oz.) can onion soup, undiluted
1 (10 3/4 oz.) can cream of chicken soup, undiluted
1 (10 oz.) can Rotel tomatoes
2 c. uncooked regular rice
1 med. size green pepper, chopped

Saute green pepper and onion in butter until tender. Stir in remaining ingredients. Spoon mixture into a greased 3 quart casserole. Cover and bake at 350 degrees for 1 hour or until rice tests done.
