CHICKEN SALAD 
2 tbsp. oil
1 tbsp. orange juice concentrate
1 tbsp. vinegar
1/2 tsp. salt
2 1/2 c. chicken, cooked and cubed
1/2 tsp. celery, diced
1 1/2 c. rice or orzo, cooked & cold
1/2 c. green grapes
11 oz. can mandarin oranges, drained
Some pineapple tidbits
3/4 c. mayonnaise
Touch of milk
Almonds (optional)

Combine oil, orange juice, vinegar, salt and chicken. Blend well. Add rice, celery, grapes, orange slices, and pineapple. Mix mayonnaise with touch of milk. Add to salad mixture. Cover and refrigerate. Add almonds just before serving. Serve with cantaloupe slices and lettuce.
