| PIGS IN A BLANKET (MEXICAN STYLE) | |

I love pigs in a blanket, but I live out of my freezer and for just a couple it's too much trouble to make the scratch dough. So, instead... hot dogs (frozen) flour tortillas, small (or corn tortillas, if you prefer) cheese (optional) finely diced onion (optional) Place desired quantity of tortillas in a plastic bag, and microwave until soft and flexible, 10 to 15 seconds or as required. Place frozen hot dog in each tortilla. Add grated cheese and/or diced onion in tortilla, if desired. Wrap tortilla tightly, making sure to fold ends in to cover the dog. Lightly coat wrapped dog with Pam, olive oil or vegetable oil. Place on cookie sheet, seam side down. Bake at 350°F for 10 to 15 minutes, until tortilla is crisp. Serve with mustard for dipping.
