8 MINUTE CHEESECAKE 
1 pkg. (8 oz.) cream cheese, softened
1/3 c. sugar
1 c. (1/2 pt.) sour cream
2 tsp. vanilla
1 (8 oz.) Cool Whip whipped topping, thawed
1 graham cracker pie crust (recipe included or this can be bought already made)
Fresh strawberries for garnish

Beat cream cheese until smooth; gradually beat in sugar. Blend in sour cream and vanilla. Fold in whipped topping, blending well. Spoon into crust. Chill until set, at least 4 hours. Garnish with fresh strawberries if desired.

GRAHAM CRACKER PIE CRUST:

18 sq. graham crackers
1/4 c. sugar
6 tbsp. butter

Crunch crackers and add sugar and butter. Place in pie tin and use.
