CARROT CAKE 
2 eggs, beaten
1 c. sugar
2/3 c. oil
1 lg. jar baby carrots
2 tsp. cinnamon
1 tsp. baking soda
1 c. flour

Mix well and bake in greased and floured 9 x 13 inch pan at 350 degrees for 20-25 minutes.

ICING:

1 (3 oz.) cream cheese
1/2 c. butter
1 tsp. vanilla
1 1/2 c. powdered sugar

Beat until creamy and spread on cooled cake.
