BLUEBERRY BRAN MUFFINS 
2 c. uncooked Quaker Oat bran cereal
1/4 c. brown sugar
2 tsp. baking powder
1 (8 oz.) carton plain low-fat yogurt
2 egg whites, slightly beaten
1/4 c. skim milk
1/4 c. honey
2 tbsp. canola oil
1 tsp. grated lemon peel
1/2 c. blueberries

Heat oven to 425 degrees. Spray muffin tin with Baker's Joy. Combine dry ingredients. Add remaining ingredients, mixing until ingredients are moistened. Fill cups. Bake 18-20 minutes.
