BLUEBERRY OAT BRAN MUFFINS 
1 c. flour
1 c. oat bran
1/2 c. sugar
4 tsp. baking powder
1/2 tsp. salt
1 egg
1 c. milk
1/2 c. salad oil
1 c. (at least) fresh or frozen blueberries

Combine dry ingredients. Stir in liquid and berries all at once, just until blended. Fill standard 2 1/2 inch cups. Bake at 400 degrees for 20 to 25 minutes until golden brown. Makes 15 to 18 muffins.

WOW! I added some other ingredients too. I added a handful of raw pumpkin seeds, a splash of vanilla, pinch of cloves, teaspoon of cinnamon, and walnuts. I also used whole wheat pastry flour instead of all purpose!

I doubled this recipe and added a cup of non-fat vanilla organic yogurt. Also, substituted milk for almond milk. Added a couple dashes of cinnamon and some vanilla extract. They were delicious. They did not puff up as much, but were very moist and tasty. I am going to try it again with a little more dry ingredient, oat bran. The family loved them.
