BLUEBERRY OAT BRAN MUFFINS 
2 1/4 c. Oat Bran
3/8 tsp. baking soda
1/4 c. chopped walnuts
1 c. fresh or frozen blueberries
3 egg whites, beaten
2 tbsp. safflower oil
1/3 c. honey
3/4 c. nonfat milk

Preheat oven to 350 degrees. Combine oats, soda and nuts. Combine eggs, oil, honey and milk. Pour into dry mixture. Stir in blueberries. Place in oiled muffin pan and bake at 350 for 25 minutes. Cool before removing muffins from pan.
