BLUEBERRY OAT - BRAN MUFFINS 
2 1/4 c. oat bran cereal
1 tbsp. baking powder
1/4 c. brown sugar, honey or molasses
1 1/4 c. skim milk
2 egg whites
2 tbsp. vegetable oil
1 c. fresh or frozen blueberries

Preheat oven to 425 degrees. In a bowl combine oat bran and baking powder. Mix the milk, egg whites, oil and sweetener together and blend in with the oat bran mixture. Add blueberries. Line muffin pans with baking cups and fill with batter. Bake 15-17 minutes. Makes 12 muffins.
