BLUEBERRY OAT BRAN MUFFINS 
1 1/3 c. oat bran
1 c. rolled oats
1/2 c. orange juice
3/4 c. skim milk
3/4 c. whole wheat flour
2 tbsp. brown sugar
1 tbsp. baking powder
1 1/2 tsp. cinnamon
3/4 c. unsweetened applesauce
2 egg whites
2 tbsp. vegetable oil
1 1/2 c. blueberries

Preheat oven to 400 degrees. Spray muffin tins with no stick cooking spray. In large bowl combine oat bran, rolled oats, orange juice and milk.

In second bowl mix flour, brown sugar, baking powder and cinnamon.

In third bowl combine applesauce, egg whites, oil and blueberries.

Combine fruit mixture with oat bran mixture. Blend well. Add flour mixture. Stir until just blended. Fill 12 muffin tins 3/4 full. If desired, sprinkle tops with cinnamon/sugar. Bake 30 minutes at 400 degrees.
