ZUCCHINI BREAD 
1 c. salad oil
2 c. sugar
2 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 c. chopped nuts
3 eggs slightly beaten
2 c. grated raw zucchini
3 c. flour
1/4 tsp. baking powder
3 tsp. cinnamon
(Pineapple, optional)

Combine oil, eggs, sugar, zucchini and vanilla in a bowl. Blend well and stir in flour, soda, powder, salt and cinnamon. Do not beat. Stir in nuts. Pour into 2 greased 8 1/4 x 4 1/2 baking pans. Bake at 325 for 1 1/2 hours or less until done.
