OATMEAL PUMPKIN BREAD | |
1 c. quick cooking oatmeal 1 c. hot low-fat milk 3/4 c. canned pumpkin 2 eggs, beaten 1/4 c. butter, melted 2 c. all-purpose flour 1 c. sugar 1 tbsp. baking powder 1/4 tsp. salt 1 tsp. cinnamon 1/4 tsp. ground nutmeg 1 c. raisins 1/2 c. chopped pecans Preheat oven to 350 degrees. In large bowl combine oats and low-fat milk; allow to stand 5 minutes. Stir in pumpkin, eggs, and melted butter. In a separate bowl mix together flour, sugar, baking powder, salt, and spices. Gradually add dry ingredients to oatmeal mixture. Stir in raisins and nuts; mix well. Place in a greased 9 x 5 loaf pan. Bake 55-60 minutes or until tests done. Cool on wire rack. Makes 1 loaf. |
