BANANA OATMEAL YEAST BREAD 
6 3/4-7 1/2 c. flour
1 c. raw oatmeal
2 pkg. dry yeast
2 tsp. salt
1 1/4 c. milk
3/4 c. brown sugar
1/2 c. butter
2 mashed bananas (ripe)
1 c. pecans
2 eggs, beaten

TOPPING:

2 tbsp. sugar
1/2 tsp. cinnamon

In large bowl mix 1 cup flour, oatmeal, dry yeast and salt. Heat milk, sugar and butter to 125 degrees. Add gradually to dry ingredients. Beat at medium speed 2 minutes. Add bananas, nuts and eggs. Beat 2 minutes. Stir in flour until dough is stiff. Knead on floured board 8-10 minutes. Put in greased bowl, turning to grease dough. Let rise 1 1/2 hours or double in size. Punch down. Let set 10 minutes.

Divide in half. Roll on floured board to size of 15 x 9 inch. Roll up. Place in 2 greased pans 9 x 3 inches. Sprinkle with topping mixture. Let rise in warm place 1 hour. Bake at 350 degrees for 25 minutes. Cover with foil and bake 25 minutes. Cool before slicing.
