ITALIAN CHICKEN & RICE 
1 c. uncooked rice
1 (14 1/2 oz.) can tomatoes, cut up, undrained
1 (8 oz.) jar cheese Whiz
1/4 c. finely chopped onion
1 tsp. Italian seasoning
1 1/2 c. water
1 cut-up skinned broiler-fryer (2 1/2 to 3 lbs.)
1 1/2 oz. can Parmesan cheese

Preheat oven to 375 degrees. Stir together all ingredients except chicken and Parmesan cheese. Pour into well-greased 9 x 13 inch baking dish. Top with chicken pieces. Sprinkle with Parmesan cheese and additional Italian seasoning. Bake 1 hour, until chicken is tender. Serves 4 to 6.
