ITALIAN CHICKEN AND RICE 
3 cooked chicken breasts
1/2 c. chopped onion
1/2 c. chopped green pepper
1/2 c. pepper strips
1 can whole tomatoes
Dash of pepper
Dash of oregano
Dash of basil
1/4 tsp. garlic
1/4 tsp. ginger
1 lg. jar Ragu sauce
4 c. cooked minute rice
Parmesan cheese

Saute first 3 ingredients in 2 tablespoons of butter. Add spices and sauce. Simmer for 15 minutes. Butter a 9 x 12 inch pan and spread rice evenly. Pour chicken mixture over rice. Top with pepper strips and tomatoes. Sprinkle generously with cheese. Bake at 350 degrees for 20 minutes.
