ZESTY CHILE-TOMATO MEAT LOAF 
1 cup rolled oats
2 eggs
1/3 cup chopped green onions (bulbs & stems)
1/3 cup chopped celery
10 oz. can diced tomatoes with green chiles, undrained
1/4 teaspoon pepper
1 teaspoon salt
2 lb. lean ground beef
1/2 cup A-1 sauce

Stir together oats, eggs, green onions, celery, tomatoes, pepper, and salt. Work in ground beef mixing gently but thoroughly.

Shape into 5" x 9" loaf on baking pan. Spread A-1 sauce evenly over loaf with back of spoon.

Bake for 75 minutes at 375°F, or until meat thermometer inserted into side of loaf reads 160°F to 170°F. Remove from oven and cool for 5 minutes, slice and serve.

Great with mashed potatoes.
