MEAT LOAF IN TOMATO SAUCE 
1 lb. ground meat
1 egg
1 sm. onion, chopped fine
1 tsp. horseradish
1/2 c. wheat germ
1 tsp. chopped parsley (if desired)
1/2 c. catsup
1 (1 lb.) can tomatoes

Mix ingredients (except canned tomatoes) together and form a loaf. Place in casserole and pour sieved can of tomatoes over the top. Bake at 350 degrees for 60 minutes.

DIETITIAN'S NOTE:

Recipes like this have put meat loaf on many a company dinner table. Make sure to use lean ground beef instead of regular ground beef-total and saturated fat content can be half as much.
