LEISHA'S EASY CHEESY SCALLOPED
POTATOES

4 to 6 medium potatoes
flour
salt
pepper
cheese
milk

Preheat oven to 350°F.

Grease a casserole dish.

Wash and peel potatoes if desired. Slice potatoes about a 10th of an inch. If cut too thick, the potatoes won't cook. Lay one layer of the sliced potatoes in the casserole dish. Lightly sprinkle the layer of potatoes with flour and then sprinkle with salt and pepper.

Sprinkle with a light layer of grated cheese. Repeat with another layer of sliced potatoes, flour, salt, pepper and cheese. Repeat this process until the casserole dish is 1/2-inch from top.

On the last layer only use salt, pepper, and cheese. Pour enough milk into casserole dish so that 1 inch of milk will cover bottom of dish. Cover and cook for 45 minutes to an hour or until the potatoes are fully cooked.

For fun, you can dice ham or cooked bacon or even add veggies in between the layers of potatoes. Broccoli is the best.

feeds 4 to 6.

HI! This sounds like a fun and healthy meal for the family that I am definitely going to give a go. I like how you have simplified this recipe. I would have originally slaved over the stove and dirtied a lot of dishes to create my "old" version. Including Broccoli I would add Cauliflower. Instead of Bacon I would add Bacon Bits for the extra flavor and less grease. I would still add my Mother's twist of Plain Panko Breadcrumbs on top. Panko's come in different flavors, and can even be homemade with a rolling pin. I would also slice up some fresh Elephant Garlic pieces in between each and every layer. The older the Garlic Bulb sits on a shelf the better the taste. FYI. Sometimes you might find a piece with a rot spot in it, so I just discard and keep searching. Anyhoo, good and all sounding easy and less money and time consuming recipe. Lookout for my take (in the future of course) for Crowd pleasing recipes. Tasty recipes. And recipes that work for the average family. I am a stay-at-home Mom. Check me out!

Always use a mandolin for perfect slicing. Chopped onion between layers would be great. Colby Cheese would also make this rich. This recipe on my upcoming meal list.

Very easy and delish! I used a mandolin for perfectly uniform thinly sliced potatoes. I also put one layer of thinly sliced onions in the middle. A keeper!

I followed recipe and my husband loved it. Very easy and no mess! The secret was as Leisha said, " slice potatoes very thin". I look forward to trying different variations.

Great recipe. So easy. I did have to cook for 1 1/2 hours. Took to a pot luck. This will be my stand by for side dish pot luck!

Very good and super easy! I did half heavy whipping cream and half milk. I also had to increase temp to 375°F and extend time to 1.5 hours but my dish was deeper than most and potatoes thicker. Keeping this one!

Am I the only one that uses buttermilk for scalloped potatoes? It gives just a bit of tang to compliment the cheese. good luck!!

Easy and yummy! I made it with broccoli and added cottage cheese as well, for a lower fat version. I'm saving this one! Thank you!

Tried this recipe, didn't turn out well. Potatoes were not done even after over 1 hour of cooking. Potatoes need to be boiled slightly first to cook thoroughly in the oven

Made recipe exactly as written, except substituted carrots for potatoes, chicken stock for milk, and cooked at 275°F for 1hr and 10 minutes. I was very disappointed. I don't know why anyone would think this was a good recipe!

Tried this recipe, but still like my mom's better.. Slice potatoes, boil like you would making mashed potatoes (About 30 mins for thin sliced, 3/4ths of the way done) Drain,.. Pour half in deep pan, butter, salt, pepper to taste, break up small chunks of Velveeta, make another layer of potatoes, butter, salt, pepper, and chunks of Velveeta, and poor about an inch of milk in the bottom, and bake on 350°F for 35 mins.

This is a family recipe I grew up with, never fails. I don't add as much milk, but no matter, it is simple, fool proof and great.

Very good recipe! Potatoes are best thinly sliced with a food processor, I added chopped onion as well onion and garlic powder to the recipe, turned out fantastic! Baked at 375°F instead of 350°F. Very easy recipe as well as easy to substitute/change up.
