3 c. flour 1/8 tsp. sugar 3/4 - 1 c. cold milk 2 tbsp. olive oil 1 pkg. active dry yeast 1/2 c. lukewarm water 1/2 tsp. salt Pizza sauce Shredded Mozzarella cheese Onions, green peppers, etc. Sausage, pepperoni, etc. Dissolve yeast and sugar in water. Add yeast mixture and 3/4 cup milk to flour. Then add salt and oil until dough masses. Add driblets of milk as required. Let rest 5 minutes. Turn dough out onto a lightly floured board. Knead 50 strokes, let rest 2 minutes, knead 20 strokes more. Dough should be soft and smooth. Let dough rise in a covered bowl 1 1/2 hours, until doubled in bulk. Turn it out and divide into 3 equal parts. Form gently into smooth balls. Cover and let rest 10 minutes. Place baking stone in oven and preheat to 500 degrees. Prepare sauce, vegetables, meat and cheese for fillings. Roll, toss and twirl each ball into a 12 inch disk. Place on lightly floured paddle. Paint surface of dish with olive oil, leaving the outer 1/2 inch uncovered. Spread sauce, vegetables, meat, and cheese on half. Flip the empty half over the filled half and press the edges together. Paint with oil (optional). Slide onto hot stone and bake for 6 minutes or until nicely browned. If baking stone isn't available, bake at 450 degrees on a flat pan 10-15 minutes or until brown. |
