PINTO BEAN PIE 
1/2 c. pinto beans, cooked, reserve juice
1/2 c. coconut, flaked
1/2 c. walnuts or pecans, chopped
2 eggs, beaten
1 c. sugar
1/2 tbsp. vanilla
3 tbsp. butter, melted

Mash beans well in juice. Add beaten eggs and remaining ingredients; mix well. Pour into unbaked pie shell. Bake at 325 degrees for 45 minutes to 1 hour. Delicious served warm topped with Cool Whip.
