PINTO BEAN PIE 
2 eggs, well beaten
1 c. sugar
1 c. canned evaporated milk
1/8 tsp. salt
1 c. mashed plain cooked pinto beans
1/2 c. Angel Flake coconut

Mix well all above ingredients and pour into pie dish lined with the following crust.

CRUST:

2/3 c. flour
Dash of salt
1/2 c. shortening

Mix until crumbly with a fork. Add 3 tablespoons of ice water or enough to make a soft dough. Roll out on a floured board to fit pie dish. Bake at 350 degrees for 45 minutes. Cool, then top with whipped cream or whipped topping.
