PINTO BEAN PIES 
1 c. Luck's pinto beans, mashed
1 sm. can coconut
2 sticks butter, softened
1 c. chopped pecans
4 eggs, beaten
3 c. sugar

Mix eggs and sugar with butter. Add beans, coconut and pecans. Pour into 3 (unbaked) pie shells. Bake at 350 degrees for 45 minutes to 1 hour (better to overcook than undercook). This tastes just like pecan pies!
