PINTO BEAN PIE 
1 1/2 c. sugar
1 tsp. ground allspice
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 1/2 c. mashed pinto beans
1 egg, beaten
2 egg yolks, beaten
1 tsp. vanilla
1 unbaked 9 inch pie shell

Combine sugar and spices in medium bowl. Mix well. Add beans, egg, egg yolks and vanilla. Mix until smooth. Pour into shell. Bake at 350 degrees for 15 minutes. Reduce heat to 300 degrees and bake 45 minutes or until set. Let cool before serving. Top with a dollop of whipping cream.
