BUTTERMILK MERINGUE PIE 
3 egg yolks, beaten
1 1/2 c. buttermilk
1/2 tsp. lemon extract
2 tbsp. flour
1 1/2 c. sugar
1 tbsp. butter, melted
Pinch of salt

Mix ingredients together and pour into unbaked pie crust. Bake in 350 degree oven for 40 minutes. Take out of oven and spread meringue made from the 3 egg whites on pie and return to oven for 10 minutes or until it is browned.
