BUTTERMILK PIE | |
2 c. buttermilk (fresh) 1 c. sugar 3 egg yolks 4 tbsp. flour 1 tbsp. butter 1 tsp. lemon extract Grated rind of 1 lemon or 1/4 teaspoon lemon zest 2 unbaked pie shells Beat egg yolks and sugar until well mixed. Blend butter and flour together and add to eggs and sugar. Add milk, flavoring and lemon rind. Pour into unbaked pie shells and bake at 300 degrees until thick like custard. Top with meringue if desired. MERINGUE: 6 tbsp. sugar 1/2 c. cold water 1 tbsp. cornstarch 3 egg whites Place sugar, cornstarch and cold water in saucepan over low heat, stir constantly and cook until mixture is thick. Beat egg whites until stiff. Add cooked sugar mixture and beat well. Spread onto pie filling and bake 15 to 20 minutes or until brown at 350 degrees. (This meringue does not separate.) Makes enough for 1 pie. |
