BUTTERMILK PANCAKES 
2 c. buttermilk
3 egg yolks
4 tbsp. liquid shortening
1 tsp. vanilla
1 1/2 c. flour
1 1/2 tbsp. sugar
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda

Beat egg whites stiff (fold in later). Mix the first 4 ingredients in a large bowl. Add remaining dry ingredients and mix well. Fold in beaten egg whites. These pancakes are light and fluffy.
