FRESH RHUBARB CAKE 
1/2 c. shortening
1 1/2 c. sugar
1/2 tsp. salt
1 egg
2 c. + 1 tbsp. flour
1 tsp. baking soda dissolved in 1 c. sour milk
2 c. finely cut rhubarb

TOPPING:

1/3 c. sugar
1 tsp. cinnamon
1/3 c. nuts

Cream shortening and 1 1/2 cups sugar; add salt and egg. Add flour and milk (with the baking soda) alternately. Stir in rhubarb. Place batter in well greased 13"x9" pan. Sprinkle topping mixture on top. Bake 45 minutes at 350 degrees.
