CHERRY CHEESE TARTS 
2 (8 oz.) pkg. cream cheese
1/4 c. sugar
1/8 tsp. vanilla
2 eggs
1 lg. can cherry or blueberry pie filling

CRUST:

2 c. graham cracker crumbs
1 c. butter, melted
1/2 c. sugar
Small (mini) cupcake cups

Mix cream cheese, sugar, vanilla and eggs until smooth; set aside. In separate bowl, mix graham cracker crumbs, butter and sugar; press 1/2 teaspoon of mixture into bottom of cups on cookie sheet, then put 1/2 spoonful of cream cheese mixture on top; bake in preheated 350 degree oven for 10 minutes; let cool. Add 1/2 spoonful of fruit or one cherry on top; chill and enjoy. These are a big hit for all occasions.
