SPICY ZUCCHINI BREAD 
3 eggs
1 1/2 c. brown sugar, packed
1 c. oil
1 1/2 tsp. vanilla
3 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/4 tsp. allspice
2 to 3 c. grated zucchini
1/2 to 1 c. raisins
1 c. chopped pecans

Beat eggs, brown sugar, oil, and vanilla. Combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and allspice. Add dry mixture to egg mixture and stir lightly. Add zucchini, raisins, and pecans; stir. Turn into 2 well greased and lightly floured loaf pans. Bake at 350 degrees for 45 to 60 minutes. Great with cream cheese.
