ZUCCHINI BREAD OR MUFFINS 
3 eggs
1 c. oil
1 c. brown sugar
1 c. white sugar
2 c. shredded zucchini
2 1/2 c. flour
1/2 c. toasted wheat germ
2 tsp. each soda and salt
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. allspice
1 c. walnuts (optional)

Beat eggs to blend; add oil and sugars. Beat until thick and foamy. Using a spoon, stir in zucchini. Combine flour, wheat germ, soda, salt, baking powder, spices, and nuts; stir into zucchini mixture.

Stir into 2 greased loaf pans and bake at 350 degrees for 1 hour or pour into cupcake pans lined with paper and bake about 25-30 minutes. Makes about 24 muffins.
