ZUCCHINI QUICK BREAD | |
2 c. shredded zucchini 4 eggs 2 c. sugar 1 c. vegetable oil 1 tsp. vanilla 3 c. flour (2 c. white, 1 c. wheat) 1 tsp. cinnamon 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 1 c. chopped nuts or raisins Beat eggs, sugar, oil and zucchini. Add flour mixture and spices (sifted). Mix and add nuts or raisins. Bake 1 hour at 375 degrees (350 degrees if using glass pan). Makes 2 loaves. |
