QUICK ZUCCHINI TOMATO ITALIANO 
2 lg. zucchini, sliced into 1/4 inch slices
1 lg. green pepper, chopped
1 lg. onion, sliced
1 lg. can tomatoes
3/4 c. shredded cheddar or Mozzarella cheese
1/2 tsp. oregano
1/4 tsp. salt
Ground black pepper

Brown zucchini, green pepper and onion in large heavy skillet with cover. Add tomatoes, oregano, salt, and pepper and simmer until liquid is reduced slightly. Sprinkle with cheese and cover until melted.
