CHOLESTEROL BANANA CUP CAKES 
1 c. white sugar
1/2 c. low cholesterol butter
2 tbsp. milk
1 c. mashed bananas, mixed with 1 tsp. baking soda
1 3/4 c. sifted all-purpose flour
1 tsp. vanilla
Pinch of salt

Mix. Cream sugar, butter, salt, and milk; add mashed bananas, soda, and vanilla alternately with flour. Place paper cup cakes in muffin tins. Fill 3/4 full. Bake at 375 degrees until toothpick comes clean, approximately 10 to 15 minutes. Store in cans or freeze. Before serving, use sieve and sprinkle icing sugar on top. Makes about 15 to 20, depending on size of cups.
