CHICKEN STEW GALLINA EN CALDILLO | |
1 whole chicken, cut up in pieces 1/2 tsp. onion salt Dash pepper 1 garlic clove, crushed 3 celery stalks 1 onion, chopped 1 bell pepper, chopped 1/3 c. cherry wine 1/3 c. orange juice 3 carrots, cut up 3 potatoes, cut up 1 can baby young corn 1/2 c. raisins Dash of thyme 1/4 tsp. curry powder 2 bay leaves 1 cube butter 1/2 c. water 2 tbsp. mustard Put chicken in deep pan with onion, salt, pepper, garlic, wine, thyme, mustard, curry powder and bay leaves. Cook for 10 minutes. Add celery, onion, bell pepper, carrots, corn, potatoes, raisins, butter, water and juice. Cook for 20 minutes at medium heat. Lower heat and simmer, covered for 10 minutes. Serve over medium egg noodles or rice. |
