FRUIT AND CHICKEN SALAD 
2 lg. stewing hens
4 tbsp. salad oil
4 tbsp. orange juice
4 tbsp. vinegar
2 tsp. salt
3 c. pineapple tidbits
3 c. mandarin oranges
3 c. green apples
2 c. slivered almonds
3 c. diced celery
2 1/2 c. raw rice
1 qt. mayonnaise

Cook rice until tender in salted, boiling water. Drain and blanch in cold water. Cook chicken until tender. Cool, remove meat and dice.

MARINADE: Mix together salad oil, orange juice, vinegar, and salt. Marinate chicken in mixture; place in the refrigerator. Add fruits, nuts, and celery.

Add rice to chicken mixture. Toss with mayonnaise. Chill. Can be made ahead.
