FRUIT CHICKEN SALAD 
2 c. cubed cooked chicken
1 c. seedless grapes, halved
1 c. mandarin orange sections, drained
3/4 c. chopped celery
3 tbsp. mayonnaise
2 tsp. soy sauce
2 tsp. lemon juice
Dash of ground red pepper (cayenne)
Lettuce

In large bowl combine chicken, grapes, orange and celery. For dressing, in a small bowl stir together mayonnaise, soy sauce, lemon juice and ground red pepper (cayenne). Mix well. Stir dressing into chicken mixture; toss to coat. Cover and chill up to 8 hours. Serve on top of a leaf of lettuce. If salad needs to be stored longer than 8 hours stir in orange just before serving.
