BROCCOLI CASSEROLE 
1 chopped onion
8 oz. Velveeta cheese
3 c. cooked rice
1 (10 oz.) pkg. chopped broccoli
1 can cream of mushroom soup
1/2 stick butter
Cracker crumbs

Saute chopped onion in butter. Melt Velveeta in double boiler. Mix all ingredients except cracker crumbs well. Put in casserole dish, sprinkle cracker crumbs on top. Bake 30-45 minutes at 350 degrees.
