IRISH POTATO SOUP 
1 c. butter
3 c. water
4 med. white onions, thinly sliced
10 baking size potatoes, peeled and cubed
3 qts. Half and Half milk (or use 1 quart Half and Half and 2 qts. milk)

Melt butter in 3 cups water. Add onions and potatoes. Simmer covered until very soft. Mash with potato masher and add milk. Season to taste with garlic powder, dried parsley, salt and pepper and diced bacon or bacon bits. Yield: Enough to serve a crowd!
