SHOEPEG CASSEROLE 
2 cans French style green beans, drained
1 can shoepeg corn, drained
1 can cream of mushroom soup
1 (8 oz.) dairy sour cream
1/2 c. chopped onion (optional)
1/2 to 1 c. sharp cheddar cheese, grated

Mix the above ingredients in a casserole dish.

Topping:

1 tube Ritz crackers, crushed
1/2 c. (1 stick) butter, melted

Spread the cracker crumbs on top of the mixture in the casserole dish. Drizzle with butter.

Bake at 350°F for 40 minutes.
