MELON SURPRISE 
1 pkg. (4 serving size) raspberry flavor sugar-free gelatin
3/4 c. boiling water
1/2 c. cold water ice cubes
1/2 c. lemon yogurt
1 1/2 c. cantaloupe or honeydew balls

Or use plain yogurt and add 1/4 teaspoon vanilla and 1/2 teaspoon grated lemon rind.

Completely dissolve gelatin in boiling water. Combine cold water and ice cubes to make 1 cup. Add to gelatin, stirring until slightly thickened. Remove any unmelted ice. Measure 3/4 cup, blend in yogurt and chill.

Divide melon balls among 6 dessert glasses. Add remaining gelatin and chill until set, about 10 minutes. Top with yogurt-gelatin mixture. Chill until set, at least 30 minutes. Garnish with additional melon balls and mint sprigs, if desired. Makes 6 servings - 40 calories per serving.
