BREAD PUDDING 
2 beaten eggs
1/4 c. sugar
1/2 tsp. salt
1 tsp. vanilla
1/4 tsp. nutmeg
4 c. milk, scalded
1/4 c. soft butter
2 c. bread cubes
Raisins, optional

Combine eggs, sugar, salt, vanilla and nutmeg. Add scalded milk and butter. Mix well. Add bread and pour into buttered baking dish. Set baking dish in a pan of hot water.

Bake in moderate oven (350 degrees F.) 45-50 minutes or until knife comes out clean. Serve with sauce. Serves 6.

LEMON SAUCE:

1/2 c. sugar
1 tbsp. cornstarch
1/8 tsp. salt
1 c. boiling water
Juice of 1/2 lemon (or more)
Grated rind of 1/2 lemon
1/8 tsp. nutmeg, optional
1 tbsp. butter

Mix together sugar, cornstarch and salt. Gradually add boiling water; bring to boil. Cook over low heat until thick and clear, about 15 minutes.

Stir in lemon juice and rind. Add nutmeg and butter. Serve hot over pudding. Makes 1 1/4 cups sauce.
