WONDERFUL CHEESECAKE 
2 (8 oz.) cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 lb. 5 oz. pie filling
2 doz. vanilla wafers

Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Line muffin tins with foil liners. Place vanilla wafer in each. Fill cups 2/3 full. Bake at 375 degrees for 15 - 20 minutes until set. Top with pie filling.
